Is there any reference of this in any of Shastras(Vedas/Bhagwatam/Puranas) that Ganeshaji die?
Many people in India argue that when Krishna says in BhagawadGeeta that do not worship devatas, Krishna is not talking about Ganeshaji/Durgaji/Shivji. So if we find reference that Ganeshaji die then its easy to show such people and make them Krishna consciousness. Afterall its only Krishna who can make them Krishna Conscious not me.

As to the reference of demi-gods dieing, as follows :-

B.G. 4.12
" Kanksantah karmanam siddhim
yajanta iha devatah
ksipram hi manuse loke
siddhir bhavati karma-ja"

In purport Srila Prabhupada states " The demigods of this material world, as well as their worshipers, will vanish with the annihilation of this material world. ... Both the material worlds and their inhabitants, including the demigods and their worshipers, are bubles in the cosmic ocean."

Lord ganesha never dies.
I want to say that Lord Ganesha doesn't come under category of Demigod as his father (Shiva - Guna avataar of krishna) & mother (Durga - External potency of krishna ) are not demigods they have thier home on the border area of spiritual world.when full annihilation takes place Lord ganesha goes back to Kailasa which is in spiritual world (Vaikuntha).
Lord brahma ( first time when jiva falls from vaikunhta he is given post of Lord Brahma) , Lord indra is post and by the pious activities one can achieve this post but ganesha is not post in fact ganesha is specially empowered dear devotee of krishna to remove obstacles in devotees life in material world.
In brahma samhita it is clearly stated that Lord Govinda keeps his lotus feet on kumbha (head) of lord ganesha to bless him.
